Starting off with the amuse - bouche “ Truffle arancini smoked paprika aioli ”, the menu proceeds to the appetizer “ Confit salmon and seaweed, compressed watermelon, coriander oil, edamame beans, nashi pear ”, the soup “ Oxtail consommé ”, the sorbet “ Mixed berry and Cointreau ”, one of three alternative main courses “ Beef fillet Rossini with caramelised foie gras, pommes Anna, spring vegetables, truffle Madeira sauce ”, “ Pan seared king scallop with pancetta green apple salad, butternut squash purée, dill velouté ” or “ Christmas goose with braised red cabbage, carrot and roasted Brussels sprouts with wild berry jus ” and finally, the dessert “ Spiced honey and brandy crémeux, gingerbread cake with mulled wine jelly ”.
